Potsticker Noodle Bowl

Iowa Girl Eats is a recipe blogspot that often fills out my weekly menu plans.  If you haven’t checked it out, I highly recommend it.  If I find a recipe my family loves and asks for again, for convenience, I add it to my recipe blogspot, but I want to always give credit where credit is due.

Potsticker Noodle Bowls taste just like potstickers without the tedious filling and sealing. This simple skillet recipe is ready in just 30 minutes!

Ingredients


  • 1 pound ground meat (turkey or pork)

  • Pinch of pepper (white or black) 

  • ½ cup + an additional 1 T. of soy sauce or soy free Tamari sauce

  • ¼ cup chicken broth

  • 1 Tablesppon rice vinegar

  • 1 tsp. Ground ginger

  • 2 tsp. Sesame oil

  • Pinch of red pepper flakes

  • 8 oz rice stir fry noodles

  • 14 oz. bag coleslaw mix

  • 1 bunch green onions chopped

  • 4 tsp. Minced garlic

Directions

  • In a bowl, combine the ground meat with pepper and 1 tablespoon of the Tamari; mix manually and set aside.

  • Whisk together the remaining Tamari, broth, vinegar, ginger, sesame oil, and red pepper flakes in a separate small container.

  • Cook the rice noodles as indicated on the packaging, boiling for several minutes until they reach an al dente texture before rinsing with cold water.

  • While boiling noodles, brown the meat in a large skillet over high heat. Incorporate the coleslaw and scallions, stir-frying until softened, then add garlic for an additional minute.

  • Toss the noodles and sauce into the pan; continue stir-frying until the noodles are tender, adding a splash of broth or covering with a lid if extra moisture is needed.

  • Allow the dish to rest for 10 minutes before serving, as the flavors are more pronounced when the temperature is slightly cooled.
